Planning for Healthy Eating

We all know that sticking to a plan or schedule for a healthy lifestyle can be difficult. The first thing we need to do is set a goal. A focus or a point we need to reach encourages us to follow through to the finishing line.

Have you ever purchased a clothing item that was one size too small, tight or just did not fit? Well, let that misfortune turn into a positive thing. Keep that garment, whether it is a dress, jeans or shorts, for your target goal. Treat your body with healthy eating habits and regular exercise and set a goal date to fit into that garment. Work your way everyday, and you will see progress in your physical appearance, as well as feeling healthy and rejuvenated.

When you begin to exercise regularly, you can enjoy all the beautiful foods available to us without feeling guilty. Once you have reached your desired weight goal, you can maintain that weight by continuing your regular exercise and eating a well-balanced diet.

This is a sure method of not "tipping the scale."

Make time to prepare healthy meals with a balance of vegetables, meats, fish, breads, fruit and, yes, even desserts. I enjoy food and find that it's one of the best pleasures of life. In order for me to enjoy everything without compromise, I need to set a goal, follow through and maintain my desired weight.

If I can do it, you can do it, too.

ELEANORA SCARPETTA - If you're wondering who I am, I'm the lady from Easton, Ct. who you might have seen on the Martha Stewart Living Show demonstrating traditional Italian Cooking. That's me - Eleanora Scarpetta, the lady who loves to cook and has a passion for food.

I recently moved from the Bronx, approximately 3 years ago. I was born in Naples, Italy in a town called "Cervinara" Province of Avellino. I came to America when I was three years old (about 20 years ago--ha ha) . 

Most of my cooking interests were inspired by my mother. She came to America at age 43 and was a domesticated homemaker all of her life. I was fortunate enough to stay home and raise my three children which gave me the time to apply a lot of my energy towards creative cooking. 

My mother taught me many diversified, easy, traditional Italian dishes which I polished and enhanced for my personal taste. Lets just say I have mastered them and made them more exciting and desirable.
