"The Benefits of Comfort Food"

Living in this fast-paced world can be stressful and unhealthy.  Having little time to eat, we compromise or settle for less nutrition to sustain us throughout the day.  Irregular eating habits in conjunction with a diet having little or no nutritional value can affect our well being as well as our personality.  

Why is food so important?  Eating the right food or comfort food is not only healthy but it also makes us feel good.  When feeling good, we become more productive, we feel contented, and it enhances our personality, disposition and well-being.   Coming home to a home cooked meal at least twice a week can be a blessing.  Taking the time to prepare a simple homemade meal brings everyone to the table and comforts the soul as well as the appetite. 

Over the years we have strayed away from the basic comfort food prepared with care and love by our ancestors.  Let’s get back to the basics and enjoy all the wonderful traditional dishes that have been lost.  Comfort food is the real food we desperately need to balance our crazed busy lifestyles. 

When feeling under the weather, the powers of that steaming, hot bowl of homemade soup can heal and make you feel renewed.  Pasta fagoli, escarole with beans or a simple wedge of a quickly prepared spaghetti pie from the oven can pamper your stomach with satisfaction.

Hearty soups, meats or fish coupled with fresh vegetables, fresh pasta dishes, homemade breads and sweet ending desserts are all comfort food we crave and long for.  Lets make comfort food a part of our lives and enjoy the benefits.

ELEANORA SCARPETTA - If you're wondering who I am, I'm the lady from Easton, Ct. who you might have seen on the Martha Stewart Living Show demonstrating traditional Italian Cooking. That's me - Eleanora Scarpetta, the lady who loves to cook and has a passion for food.

I recently moved from the Bronx, approximately 2 years ago. I was born in Naples, Italy in a town called "Cervinara" Province of Avellino. I came to America when I was three years old (about 20 years ago--ha ha) . 

Most of my cooking interests were inspired by my mother. She came to America at age 43 and was a domesticated homemaker all of her life. I was fortunate enough to stay home and raise my three children which gave me the time to apply a lot of my energy towards creative cooking. 

My mother taught me many diversified, easy, traditional Italian dishes which I polished and enhanced for my personal taste. Lets just say I have mastered them and made them more exciting and desirable. 

Of course, much of my motivation comes from a healthy appetite and a craving for good, delicious food. Please read on...I'd love to share my insight on cooking with you, and tell you more about Italy...its influence and inspiration.
